So since being home with the baby (and in quarantine), I have been baking a different recipe each week! Joe and I love chocolate chip muffins and I wanted to make a healthier/guilt free version! I took a normal recipe and swapped out a bunch of ingredients for healthier alternative and they came out delicious so I wanted to share the recipe with you!
Ingredients:
2 cups of whole wheat flour (you could use almond and/or oat flour too)
1/3 cup of light brown sugar
1/3 cup of coconut sugar
1 tsp of baking powder
1/2 tsp salt
2/3 cup of almond milk (you could use cashew milk too)
1/2 cup of melted butter
2 eggs
2 tsp vanilla
1 cup mini chocolate chips
Cooking Instructions:
Preheat oven to 400 degrees
In a bowl, combine flour, brown sugar, sugar, baking powder and salt. Mix well
In a separate bowl, whisk together milk, eggs, vanilla and butter
Add dry ingredients to wet ingredients
Fold in chocolate chips
Spoon into muffins tin and fill about 2/3 of the way
Bake for 16-18 minutes
