Guilt Free Chocolate Chip Muffins



So since being home with the baby (and in quarantine), I have been baking a different recipe each week! Joe and I love chocolate chip muffins and I wanted to make a healthier/guilt free version! I took a normal recipe and swapped out a bunch of ingredients for healthier alternative and they came out delicious so I wanted to share the recipe with you!


 

Ingredients:

  • 2 cups of whole wheat flour (you could use almond and/or oat flour too)

  • 1/3 cup of light brown sugar

  • 1/3 cup of coconut sugar

  • 1 tsp of baking powder

  • 1/2 tsp salt

  • 2/3 cup of almond milk (you could use cashew milk too)

  • 1/2 cup of melted butter

  • 2 eggs

  • 2 tsp vanilla

  • 1 cup mini chocolate chips


Cooking Instructions:

  • Preheat oven to 400 degrees

  • In a bowl, combine flour, brown sugar, sugar, baking powder and salt. Mix well

  • In a separate bowl, whisk together milk, eggs, vanilla and butter

  • Add dry ingredients to wet ingredients

  • Fold in chocolate chips

  • Spoon into muffins tin and fill about 2/3 of the way

  • Bake for 16-18 minutes

  • ENJOY!!
